Hands-on sourdough bread making workshop
We are available for private one day-long sourdough bread making workshops in the comfort of your own home (West Norfolk and Norwich areas only). We will bring all the necessary tools, ingredients and only require an oven, a worktop and keen hands! Through this course, you'll learn how to bake amazing sourdough in your own kitchen, and will be able to start your baking journey immediately. No fancy bakeries with professional tools and techniques that cannot be easily found in a home kitchen.
No need to share a bench with many other people. The course will be tailored around your needs and you can invite a friend or family member to join.

Who is this course designed for?
The course will be tailored around your experience. No prior experience? No problem! This course is aimed at both beginners and those who have baked bread before but would like to dive deeper with a full hands-on training.
What does the course cover?
We start with a brief introduction on sourdough bread and then it’s hands-on all the way. You will learn how to make sourdough bread step-by-step, from choosing the best ingredients to fermentation techniques, shaping, and baking. We will cover up to 4 different sourdough recipes on the day.
Rest assured that after this workshop you will be making sourdough yourself with plenty of confidence. And most importantly, you will be experimenting and having fun with one of the healthiest and most delicious foods ever.
Are there any give-aways?
Beyond all the great knowledge (and fun!) you will gain, you will also receive a lively sourdough starter, a proving basket and a scraper, so you can start your home sourdough making journey straight away. Because we will spend quite a few hours together, Enrico usually brings something home-baked to snack on while discussing sourdough and the likes.

Hands-on pizza, flatbread and focaccia workshop
We are also available for private slow-fermented pizza, sourdough flatbread and focaccia workshops in the comfort of your own home (West Norfolk and Norwich areas only). We will bring all the necessary tools and ingredients and only require an oven, a worktop and keen hands!
Who is this course designed for?
Through this course, you'll quickly learn how to make pizza every week in your own kitchen ("in teglia", that means in a tray; or round - we will go through both methods) flat-breads (these can be made in batches and frozen until the next curry-night) or focaccia (so easy to make with some planning; it makes the most ideal starter for a rustic dinner).
What does the course cover?
You will learn how to prepare slowly fermented pizza, focaccia and flatbread doughs step-by-step, from choosing the right ingredients, to mixing and finally baking.
Anything else I need to know?
We will not have time to wait for the slow fermentation to do its magic so we will bring ready to bake doughs but you will get a chance to prepare doughs from scratch and perform all the hands-on steps involved in the process.

Who is this course designed for?
Beginners who never baked sourdough or already had a go at it but wish to have a thorough introduction on the fundamental principles of “real bread”.
What does the course cover?
The foundation of sourdough bread, how to choose the right ingredients and tools, grow confidence in the baking process and the “why” behind each step involved.
What will I get out of this course?
Understand things such as: how do I look after my starter? How do I mix different flours? When is my dough ready to bake? Why is my bread flat? How do I get that sexy open-crumb?

One-to-One Troubleshooting session
Who is this session designed for?
People with some experience who have some critical questions around the process and find it difficult to troubleshoot and navigate through all the endless information available online and in books.
How does it work?
You tell us what your question(s) is/are and we facilitate a focused goal-oriented discussion using relevant theory and real-life examples.
Get answers to your burning questions.
Such as: is my starter healthy? How to use a new flour? Can you help me with the baking timetable? How do I improve the oven spring? How to bulk-bake? Etc.
What will I get out of it?
A dedicated space to ask a sourdough enthusiast who walked through the same path as you. No shame or hassle of having to research endlessly for an answer. You will receive a straight-to-the-point plan to tackle those hurdles preventing you from achieving greater baking results.
