Why Panito Sourdough

Hi! We are Enrico and Vera, the brains (and hands) behind Panito. With Panito, we are determined to show you how easy it is to bake sourdough from scratch at home, and how much healthier and happier your life will become.

We recognise how difficult it can be when starting, with overwhelming and often confusing information available. Hence, we did all the hard work for you and put together hands-on workshops as well as online courses on sourdough bread making that are straight to the point but without leaving out all the “juicy bits”.

There is nothing like the smell of freshly home-baked sourdough and the sound of a bite on that just out-of-the-oven golden crust. And we really don’t want you to miss out on that.

If you are wondering where the word Panito comes from…Portuguese people seriously like their bread, hence in the rural areas of South of Portugal, Vera’s homeland, there is a word to describe that kind of homemade bread that is so good, tasty, and warm that you can’t get enough of it, panito. So, if you will ever be around rural Algarve or Alentejo, you may catch a sweet old lady saying “Ai que belo panito!” 

Who we are

Both Enrico and Vera have a background in science, Enrico is Italian and Vera is Portuguese and together they decided to share their passion and knowledge about one of the things they love the most in life, bread.

Enrico is the one who gets his hands ‘dirty’, experiments and tries new recipes, types of flours, and techniques. Instead, Vera, who is a Naturopath, researches, learns and applies the health benefits of sourdough. You can see a great smile in her face when a new loaf comes out of the oven as well as every time a patient wins his/her health back also thanks to sourdough.  

We recently moved to Norfolk to escape the city and be closer to nature (and to so many fields of wheat!). If you also live in this beautiful part of the world, we would love to say hello!
